Salt & Straw opening downtown at 1st & Pike on November 7

After scooping up the former Starbucks location across from Pike Place Market in April, Salt & Straw has announced its new store will open Nov. 7.

The store marks the third Puget Sound-area opening this year for the Portland-based ice cream company. It opened shops in Redmond and Seattle's Queen Anne neighborhood earlier this year.

The new store, located at 102 Pike St., will occupy 2,453 square feet, about twice the size of its typical ice cream parlors. Portland-based Osmose designed the shop.

The ice cream company, known for its unorthodox flavor combinations, has grown a cult following since its founding in 2011, and expansion has followed with it. The company now operates 43 stores across seven states, with four in Washington.

"Washington has been a big part of our journey," co-owner Kim Malek said in a press release earlier this year. "This city has shaped who we are, and we're honored to continue growing alongside the community."

The downtown location will feature an eccentric, store-exclusive flavor: the Pike Sundae — a sour-cream-and-horseradish gelato with salted apple compote, topped with smoked salmon "snow," candied salmon caviar and dill tuile.
